Gazpacho

Sí, ya sé que no estamos en verano, pero es la receta que he enviado a They draw and cook y la han publicado!!!! Podéis pinchar aquí para verla.









Como la letra pequeña casi no se lee, os la copio aquí para quien le interese:
Gazpacho
Ingredientes
2 Kg. de tomates pera maduros
2 cebollas
2 pepinos
4 pimientos verdes
Unos 200 cl de aceite de oliva virgen extra
Unos 50 cl de vinegar de vino blanco
Sal, hielo
Opcional: 1 diente de ajo
Modo de hacerlo:
Lavar las verduras, pelar las cebollas completamente y el pepino en parte, quitando los extremos. Lavar los  pimientos quitandoles el rabillo y las semillas. Lavar los tomates quitandoles el rabillo. Cortar todo en cuartos y poner en la batidora de vaso grande 4 partes de tomate y 1 parte de cada una de las demás verduras. Añadir aceite hasta tapar las aspas y vinagre y sal al gusto. Triturar bien con la función de turbo durante un buen rato. Ha de quedar un puré líquido color naranja claro. Cuanto más se mezcle todo, mejor. Servir frío con unos cubitos de hielo y la guarnición hecha de las mismas verduras o pan (a ser posible candeal) en trocitos.
Una opción más fashion es sustituir el tomate por fresas y lo demás igual. Muy rico y distinto. El otro día ví en They draw and cook un gazpacho de mango, habrá que probarlo!

Wash all the vegetables. Peel onion completely and cucumber partially, cutting off the ends. Remove seeds and stem of peppers. Remove stem of tomatoes. Cut every vegetables in quarters. Put in food processor’s vase 4 parts of tomato, 1 part of each of the other vegetables. Pour olive oil till cover the blades. Add a splash of vinegar and a good pinch of salt (you can add then the garlic clove if you want a strong flavor). Blend everything, using the turbo button of your food processor for long. The more everything mixes, the better texture it will have. It should have the consistency of a pale orange liquid puree. Serve cold with a couple of ice cubes

You can also serve with a garnish of each of the used vegetables, finely chopped. Delicious in summertime! Perfect in cocktail parties served in small glasses as “verrines”.

This is the classical recipe we do at home, but you can also try to do it with strawberries instead of tomatoes (all the rest remains the same). Delicious too. I read yesterday another one with mangoe. I'll have to try that in summer!
